Twice Baked Crawfish Potatoes
Had these in the student cafeteria at Northern Louisiana State University. Tried to replicate. The cafeteria served them with a slice of -- ugh-- processed cheese. I top mine with real mild cheddar. The secret though -- is Bayou Magic Cajun Seasoning.
